These carrot muffins are mini version of Carrot Cake. Carrots have been used in sweet cakes since the medieval period, during which time sweeteners were scarce and expensive, while carrots, which contain more sugar than any other vegetable besides the sugar beet, were much easier to come by and were used to make sweet desserts.
Recipe of carrot apple muffin is so simple just mixing dry ingredients into the wet ones and muffin batter is ready. Batter for this muffin is little bit lumpy and on a thick side but that's the key to soft and moist Carrot Apple Muffin. The pitfall with all muffin batters is in over mixing the batter and ending up with a tough muffin. So make sure you only mix the batter until the ingredients are combined and moistened.
These are one of my favorite recipes of muffin because in each muffin you can enjoy natural sweetness of carrot and apple. I make them quite frequently and store in airtight container, it lasts a week and I enjoy it everyday with my morning coffee.
